Healthy blueberry bran pancakes

I’m going through a healthy pancake making phase at the moment – and blueberry and bran fit this description nicely.

In my world, it’s excellent motivation to get out of bed. They only take about 15-20 minutes from start to finish and I feel like I’ve started the day with something creative and yum. But regular pancakes aren’t really an ‘everyday’ food… but these totally can be.

Healthy blueberry bran pancakes with a cup of tea

This no-oil, no-butter, low cholesterol recipe, with a healthy dose of fibre and berry-goodness should tick more breakfast health nut’s lists. After making them I did think about how chocolate chips would go in pancakes, but that’s another post for another day.

Ingredients

3/4 cup oat bran or ready to eat bran flakes
2 large egg whites, or one whole egg
1 1/4 cups low-fat buttermilk
1 cup all-purpose flour
1 tablespoon sugar (I used brown or coconut, but you sail your own ship)
1/2 tablespoon lemon zest, or to taste
1 teaspoon baking powder
1/2 teaspoon baking soda
½ teaspoon cinnamon
1/8 teaspoon table salt, or to taste
1 cup fresh blueberries

Method

  1. Add egg whites and buttermilk to bowl; stir and allow to stand while you prep everything else.
  2. If using bran flakes, crush cereal in a food processor or blender, or place in a zip-close plastic bag and crush with a rolling pin; pour into a medium bowl. Or just use bran.
  3. Add bran, flour, sugar, lemon zest, baking powder, baking soda, cinnamon and salt to your bowl; whisk until well blended. Gently fold in blueberries.
  4. Coat a large skillet/fry pan with cooking spray; heat over medium-high heat.
  5. To make pancakes, place 3 tablespoons of batter onto skillet; repeat to make 4 pancakes at a time. spread the batter thin when putting in the fry pan.
  6. Cook pancakes until puffed on top, about 2 minutes; flip and cook until golden brown on other side, about 2 minutes more.

Makes: 8 pancakes, 4 serves (2 per person – though I tend to have one and eat the other for morning tea, they’re very filling).

Healthy? Well I didn’t put it in the title for fun! These are 116 calories per pancake. Plus your topping of choice.

Hot tip: Put the in the toaster to reheat them! They also freeze well.

    blueberry bran muffins are one of my favs so in pancake form i can only imagine how tasty they are!
