These are my new favourite muffin. To date I have over 20 muffin recipes on this blog and these are now my favourite. That says something.
They have an awesome amount of blueberries in them (check), get a good amount of tang from the lemon (check), and the cornmeal and yogurt make them moist and heavy WHILE being low fat (check and CHECK!!).
Blueberries are one of those super foods that contain anti-oxidants. I realise, as I write this, that considering I just splurged on a face serum yesterday due to its promise of anti-oxidant goodness, I should really know why that’s a good thing. (more…)
Whoops. Did I have a blog I was supposed to update? My bad.
I’m in a play again (see below for some sneak preview shots). Which means I am as time poor as they get. It’s not that I stop baking when I’m time poor, a woman needs to eat, I just reach for the classics instead of trying new recipes.
So I thought I’d share some of my staple go-to’s that I posted when I’m pretty sure my readership consisted of me, and my family members I made sign up.
Chocolate carrot muffins:
Heavy as a rich chocolate cake, RIDICULOUSLY low in calories. High GI (OK, I don’t actually know what that means, but with the oaty-carroty goodness I’m sure it is). I literally have one next to me as I type this. (more…)

I have ‘issues’ with quinoa. When I first started this blog I had this conversation about 18 times with various people:
Well-meaning individual (WMI): Oh, you have a food blog, have you tried keeeenwaah yet?
Me: You mean quinoa?
WMI: Oh, it’s actually pronouced keeeenwwaaaah.
Me: You mean quinoa?

These muffins will work. They will be full or oatmeal and raspberries. They will have minimal calories and still be equal part moist and delicious.
No need to know where the life jackets are or the emergency exits. Everything is, and will be, just dandy.

Banana bread is maths. Well, trying to make healthy banana bread with no butter or oil, that also isn’t rubbery, is maths. The high butter quantity in banana bread has always annoyed me as it feels like it should be a healthy snack. Banana + Bread = healthy, right?
