I need to talk to you about putting coffee in double chocolate, chocolate-chip cookies.

And, well, this is important.

Did you know that adding coffee to chocolate baked goods actually intensifies the chocolate flavour?

And, did you know that coffee releases adrenaline and bumps up your dopamine levels?

And that chocolate contains a unique natural substance that creates a sense of euphoria?

Jam thumbprint cookies

These seem to be the cookies of people’s childhoods. Whether out of the packet or made my mum, people remember these.

They also seem to go by a few names, like Jam drops or Jam cookies. That’s OK. Call them what you like, they’re lovely buttery shortbread cookies,with a soft jam centre.

Buttermilk cookies

This post is full of declarations and an accusation.

Declaration number 1 (made by my friend Tenille from my fruit mince pies adventures): ‘These buttermilk cookies are the best cookies you’ve ever made.’

I loved them too. But she said that as much as she loves the chocolate chip cookies, if presented with both, she would take the buttermilk cookie. (more…)
